Red velvet keto cookies are perfect for a gluten free dessert. Keto friendly and a low carb dessert for a healthy holiday snack. Topped with sugar free cream cheese frosting for a keto cookie that’s tangy and sweet!

Ingredientsred velvet keto cookies
- 1 1/4 cup blanched almond flour
- 2 tablespoon Coconut flour
- 1 tablespoon Cocoa powder
- 1/4 cup granulated sweetener
- 1/4 teaspoon Xanthan gum
- 1/4 teaspoon Baking soda
- 1/2 teaspoon Salt
- 15 g cacao butter sub for 1 TB unsalted butter
- 3 tablespoon Unsalted Butter
- 3 tablespoon Heavy cream
- 1 teaspoon Liquid stevia
- 1 teaspoon Vanilla extract
- 1 large Egg
- 1/2 teaspoon red food coloring
Keto cream cheese frosting
- 4 ounces Cream Cheese
- 1 tablespoon Sour Cream
- 2 tablespoon Powdered sweetener

- Melt cocoa butter and unsalted butter together then allow it to cool
- Combine blanched almond flour, coconut flour, xanthan gum, granulated sweetener, baking soda and salt
- Grab cooled butters and add in vanilla extract, liquid stevia, egg and food coloring if you choose to use it
- Combine dry and wet to form a thick dough. Then place in refrigerator for an hour
- After an hour using double scoops of a cookie scoop roll out cookies with hands and smash a little. Not too flat but they will rise.
- Bake for 12-15 minutes at 300ºF

- Bring cream cheese to room temperature
- Cream sour cream and cream cheese together then add in powdered sweetener
Recipe Notes
Tips
- Can sub cacao butter for 1 TB of unsalted butter
- It’s hard to see brown if using the red food coloring but you should look for the edges having a harder finished look
